Well HELLO!!!!! I know I have been MIA for the longest but I am definitely back!
Let us not mention being away from our friends and randoms we met at clubs (hahaha, I hope I’m not the only who likes meeting new people). This lockdown has definitely taught me that my own company is not that bad hey.
But all that is somewhat behind us (not fully but we celebrate the better times). We have been given Level 1 grace, this gets to invite a few friends and family for drinks and bonding sessions, I know that makes me happy.
As much we do not know what the future holds when it comes to COVID-19 and outdoors, I’m definitely hoping for some fun-in-the-sun during December. I mean, that’s South Africa’s favourite month.
This is where my scrumptious ribs came up! Perfect snack for a few friends with some cold bev in hand.
Spicy Sweet Pork Ribs
1kg Pork Belly Ribs (belly ribs, fatty and full flavour)
1 Cup Tomato Sauce
3 Tbsp Soya Sauce
3 Tbsp Chopped Garlic
1 Tsp Ground White Pepper
5 Sprigs Fresh Thyme
2 Tbsp Finely Chopped Garlic
Pinch Cayenne Pepper
2 Tbsp Brown Sugar
Mix your dry and wet ingredients together and marinade your ribs overnight in the fridge.
Preheat your oven to 190°C or get your braai hot! Once the oven is hot, you ribs should be in a foiled oven tray, keep the surplus marinade on the side for basting as it cooks (can also do that on the braai).
In the oven, cook them for a good 30 minutes before turning them over and let them cook for 30 more minutes. Turn them one more time and baste with the marinade that was left over. Keep turning and basting for the next hour.
This will ensure meat the falls off the bone and just has all the flavours you want in pork rib!
U TIp: Serve with Mashed Potatoes, Wedges, Salad….anything actually!
